Cream Cordials

From the book "Cordials From Your Kitchen"

To start with, you will need to create two different "bases".

Cream Base:
1 can (14 oz) sweetened condensed milk.
1 can (12 oz) evaporated milk.
1 cup whipping cream.
1 cup simple syrup.
Mix all ingredients together in sterile 2 qt container.

Simple Syryp:
Combine equal parts of sugar and water in saucepan. Mix over low heat until dissolved. Don't boil! Once mixture is clear, remove from heat.

Once you have these two bases, you are ready to make the actual cordials. As long as you have all the ingredients, just mix them together and enjoy. If you want a bit more of a kick, you can always increase the alcohol content, but that could change the overall taste in unpredictable ways.

Irish Cream:
1/2 cup Simple Syrup
2 Tablespoons chocolate syrup
1 teaspoon coconut extract
1 teaspoon pure vanilla extract
1/2 teaspoon almond extract
2 eggs
2 1/2 cups Cream Base
1 cup Brandy
Mix all together and use within 2 weeks.

Chocolate Covered Cherry Cream:
3/4 cup Simple Syrup
1 cup 80 proof Vodka
1/2 cup Marashino Cherry juice
2 cups half and half
2 Tablespoons dark cocoa powder mixed with 2 Tablespoons water over heat until blended
1 teaspoon imitation almond extract
Mix all together and use within 2 weeks.

Coconut Cream:
1 1/4 cup Simple Syrup
1 can (14 oz) coconut milk
2 teaspoons imitation coconut extract
1 cup 100 proof Vodka
Mix all together and use within 1 month.

Chocolate Hazelnut Cream:
1 cup Brandy
1/2 cup hazelnut syrup
3 Tablespoons chocolate syrup
1 teaspoon pure vanilla extract
2 1/2 cups Cream Base
Mix all together and use within 1 month.
